Disabled or not, food is one such area where each one has got his/her idea about how they want to enjoy their food. Disability need not be a hinderance to enjoying good food. Since, the mobility of the disabled persons is generally restricted, the digestion is greatly affected, resulting in constipation and other digestion problems. The key to good digestion is availability of good quantity of roughage or fibres which aid in relieving constipation to a great extent.

Each month a mouth watering health dish will be put on this section.

Good Day Salad

Ingredients - Serves two

  • 1 medium size Capsicum
  • 1 large size Tomato
  • 2 medium size Carrots
  • 1 small onion (with greens)
  • 2 stalks of lettuce or celery
  • salt, pepper powder
  • 2 teaspoons salad oil.

Method
Chop the capsicum and tomatoes into small pieces, grate the carrots, cut the green onions into ringlets and tear the celery/ lettuce stalks into small portions. Toss the ingredients into a salad bowl, and mix using fingers. Put the dressing made of salad oil, pepper powder and salt as per taste on the mixture. Mix again. Serve with food.

This colourful dish is not only beautiful to look, but since it is vegetables eaten raw provides lots of fibre.
