		Minos Falafel & Tahina Recipe
	MINOS FALAFEL Suggested methods of preparation-can be varied Depending on individuals taste. Ingredients- 1) Falafel Mix 2) Tehina Sauce Concentrate 3) Peeta Bread/Roti 4) Red Chilli Sauce 1] FALAFEL BALLS In a large bowl blend Falafel mixture and water in equal parts. Let stand for 10 minutes. Shape mixture into 1-inch balls. Deep fry till golden brown. Remove and drain on paper towels. The 180 Gms Falafel Box could be ideal for min 12/15 Falafels and the 400 Gms Falafel Jar could be ideal for min 25/30 Falafels Depending on size and taste 2] TEHINA SAUCE 1 part Tehina Concentrate 4 parts curd or 4 parts water 1/2 tsp of lemon juice salt to taste Garlic for flavor Mix all the ingredients in a blender. Sauce is ready for serving. [Tehina sauce can also be used as a salad dressing or a snack dip]. The 500 Gms Tahina Jar Concentrate could be ideal for over 100 Falafels 3] RED CHILLI SAUCE 8-10 whole dried red chillies Few pods of garlic 1 Tsp lemon juice 1/2 cup water Salt to taste. Soak the chillies in water for 1/2 an hour. Add the other ingredients and grind to a sauce. 4] METHOD FOR PREPARING FALAFEL Take a whole peeta bread and cut from center into two halves. Carefully spilt each half from the center. Fill the peeta bread (pocket) with 2-3 falafel balls then pour 2-3 teaspoons of Tehina sauce, add salad (lettuce, tomato, parsley, red cabbage). Top it up with 2-3 teaspoons of Tehina sauce and finally add red chilli sauce on top and serve immediately 5] Peeta bread is available in most good bakeries including the following : 1.
